Soft & Chewy Salted Oatmeal Chocolate Chip Cookies
The best damn cookies!
These babies are mouthwatering. I am a huge sucker for salty sweet goodies and these definitely hit the spot. Kennedy loves to have a cookie so I prefer to have some homemade ones ready for her because then we know exactly what's in them. This recipe has been tried and tested and devoured by many. They are such a hit to take to a causal party too.
Ingredients
Preheat oven to 350°F and line two baking sheets with parchment paper. I like to use all organic ingredients or as close to as possible:
1 & 1/2 cup Almond flour
1 & 1/2 cup flour
1 cup organic rolled oats
1 cup packed brown sugar
1 cup organic maple syrup
2 large organic eggs
1 teaspoon pure vanilla extract
12 ounces chocolate chips or chunks
¼ cup chopped walnuts (optional)
2 tablespoons organic whole milk (or nut milk)
1 teaspoon baking powder
1 teaspoon baking soda
OK so time for Directions
Total time: 45min
Serving size: about 2 dozen
Preheat to 375°F and line 2 baking sheets with parchment paper.
In a large bowl mix all dry ingredients. Then add your eggs to the mix one at a time along with the rest of your wet ingredients.
Add those chocolate chips
Mix with a KitchenAid or electric hand mixer so the consistency is perfect
Using an ice cream scooper place cookie dough on lined baking sheets. My ice cream scooper is on the larger size so I fill my scooper about half for each cookie
Sprinkle a little rough sea salt on top of each cookie
Bake for 15-20min depending on your oven until the cookies have dark golden edges and a light golden color all over. I like to set the timer to 15min to check and be on the safe side, no one wants burnt cookies. Remove the cookies from the oven and set them on a baking rack for 10 minutes. Boom baby your cookies are done. Serve them right after or store them in an airtight container for up to 1 week.
